Chili Relleno

 Ingredients
1 large egg, separated
dash salt
1 large Big Jim green chile (Big Jim chiles are 7- 10 inches long mild to medium heat)
(substitute 1 large poblano if you want a hotter chile.)
¾ oz shredded Monterey Jack cheese (white goat cheese called Manchego is more original)
oil for deep frying
½ cup flour
 
 
 Instructions
1. In a medium bowl, with electric mixer on high speed, beat egg white and salt until stiff.
2. In a small bowl, lightly beat egg yolk; fold into egg whites. Spread half the mixture in
prepared dish.
3. Make a slit down the length of the chile, carefully remove seed ball.
4. Fill chile with cheese.
5. Lightly coat with flour. Dip chile into egg mixture, Repeat this one more time.
6 Deep fry in oil until golden brown.
