Luscious Tomato-Red Pepper Tart

 Ingredients
unbaked pie shell - homemade or not
3 C. shredded mozzarella
4 large homegrown tomatoes
2 red peppers
1 ice cube size piece of pesto
1 C. miracle whip
1/2 C. grated parmesan
1/4 t. ground white pepper
fresh basil leaves for top
 
 
 Instructions
partially bake crust at 450 for 5-7 min.

sprinkle 1 c. of mozzarella on hot crust

reduce oven to 375

cut tomatoes and drain on paper towels. arrange over cheese in crust.
combine remaining cheeses, pesto, mayo and pepper. spread half of mixture over tomatoes.

roast red peppers under broiler, sweat and skin. slice and arrange peppers over cheese mixture. top with remaining cheese mixture.

bake at 375 for 25 min. I broil for 1 min at the end. let stand 5 min before cutting. top each piece with fresh basil.
