Marisa's Best Blueberry Muffins

 Ingredients
1 stick butter
1 C. sugar, or slightly less
2 large eggs
1 t. vanilla
2 t. baking powder
1/4 t. salt
2 1/2 C. blueberries, (mash 1/2 C. with fork)
2 C. flour
1/2 C. milk
1 T. sugar mixed with 1/4 t. nutmeg
 
 
 Instructions
Heat oven to 375. Grease 12 muffin cups, including the area between each cup, or use foil muffin papers.

In a med bowl, beat butter. Beat in sugar until pale and fluffy. Add eggs, one at a time. Beat in vanilla, baking powder and salt.

Mix mashed berries with batter.

Fold in half flour with a spatula, then half the milk. Add remaining flour and milk. Fold in remaining blueberries.

Scoop into muffin cups, sprinkle with nutmeg sugar. Bake 25 - 30 min, or until golden brown. Let cool 30 minutes in pan before removing.
