Welsh Rarebit

 Ingredients
1 pound sharp cheddar grated (5 cups)
2 large egg yolks
1/4 c. beer
1 T. dijon mustard
1 t. worcestershire
pinch of cayenne
coarse salt and ground pepper
5 slices bread
5 slices beefsteak tomato
1 t. oil
 
 
 Instructions
preheat broiler and line with foil.
stir together first 6 ingredients.
lightly toast bread on one side, and invert, top with cheese mixture. place tomatoes next to bread, drizzle with oil and season.
broil til cheese is bubbling and golden brown. top with tomato slice, serve! :)
